Flour Petra 0102HP
Petra 0102HP flour is a Tipo 1 wheat flour made from cylinder-ground Italian wheat or wheat from the European Union.
It contains sprouted grains to activate and amplify the enzymatic activity of wheat in order to obtain faster maturation as well as more marked characteristics (better honeycombing, more friability of the dough after cooking, etc.).
This flour is ideal both for short maturing at room temperature (4 to 6h) and for medium and long maturing with refrigerated management (24 to 48h).
Its particularities allow it to be perfect both for pre-ferments and for direct serifs.

Directions for use: 4 to 6 hours at room temperature and up to 48 hours with refrigerated control (refrigerator) at 4°.
San Marzano tomatoes
San Marzano peeled tomatoes are recognized as one of the best varieties of tomatoes in the world due to their incredible characteristics: a fleshy tomato that releases very little water, very few seeds and a very pronounced and recognizable taste.
This tomato is produced in the region of "Agro Sarnese-Nocerino" in Campania. since 2009 it has been protected by a protected designation of origin (DOP in Italy AOP in France).
Directions for use for Pizza: Crush by hand and salt (1gr of salt for 100gr of tomato), do not mix with other condiments to avoid losing the taste of the tomato which is self-sufficient.
